The Ambaristo is made from Merlot imported from France's Bordeaux region and sugarcane, plum, and berries grown in the farmlands of Ilocos Norte in the Philippines. It was named after Saralogo Ambaristo, one of the leaders of the Basi Revolt of 1807, and like traditional basi (sugarcane wine), it is aged for 12 months or longer in temperature-controlled earthenware.

Of the many delightful transformations that Ambaristo has gone through, the happiest was the moment when the company decided on providing balance and nuance. This is a sweet wine but it is not jammy and will never be overly sweet.
